Strawberry Pie with Streusel
The combination is wonderful, and the pie turns out very tasty. Today I suggest making a very simple yet very delicious pie. It has a tender, buttery cake-like batter, fragrant strawberries with a slight tang, and plenty of crisp, sweet crumb topping.

Step 1
First, let’s make the streusel, also known as crumb topping, sugar crumbs, or flour crumbs; it has many names. What you will need: cold butter, mine is 82% fat, flour, sugar, salt, and vanillin.

Combine everything and rub it with your hands into crumbs. For now, place it in the refrigerator.

Next, the batter. For it you will need: room-temperature eggs, size 1; softened butter, mine is 82% fat; flour, cornstarch, baking powder, salt, sugar, and vanillin.

Combine the sifted flour with the starch and baking powder, mix, and set aside for now.

Beat the butter until pale and fluffy, about 4-5 minutes. Be careful not to overbeat it.

Add the salt and vanillin. Add the sugar in 2 additions, beating well each time for about 1 minute.

Then add the eggs one at a time, also beating well after each addition. The mixture should turn out light, fluffy, smooth, and creamy.

Then add the dry ingredients all at once.

The batter should turn out smooth and creamy.

I will bake it in a 20 x 20 cm pan, about 8 x 8 inches. I greased the bottom and sides with vegetable oil and lined it with parchment paper.

Pour in the batter and smooth it out.

Wash, dry, and hull the strawberries, then slice them into pieces about 5 mm thick, about 1/4 inch.

Arrange them tightly on top of the batter.

Spread the streusel evenly over the top. After refrigeration, it will be crumbly and firm. Put it into an oven preheated to 170°C (340°F) and bake for 50-55 minutes.
