Strawberry Jelly with Gelatin

A simple, light, and visually appealing dessert. Strawberry jelly with gelatin is a wonderful low-calorie treat you can make year-round with fresh or frozen berries. It delights both kids and adults on weekdays and special occasions.

Step 1
You can increase or decrease the amount of sugar to your taste.
Step 2
Soak the gelatin in 1.7 fl oz (50 ml) of cold water and let it swell for 10-20 minutes.
Step 3
Rinse the strawberries, pat them dry, and remove the stems. Cut most of the berries into quarters and leave the rest whole. You can use ripe fresh or frozen strawberries. Feel free to replace or mix with other fruits or berries.
Step 4
In a small saucepan, bring the remaining 10 fl oz (300 ml) of water to a boil. Add the sugar and stir until dissolved. Then add the whole strawberries and simmer together for 1 minute. You may use a heat-resistant sugar substitute instead.
Step 5
Remove the saucepan from the heat, cover with a lid, and let it steep for 10 minutes. The drink will develop a deeper color.
Step 6
Strain the hot liquid through a sieve. The boiled berries are no longer needed. Add the swollen gelatin to the strawberry syrup and stir until fully dissolved. Let the mixture cool to room temperature.
Step 7
Divide the cut strawberries between dessert bowls or glasses. Pour the cooled strawberry mixture over them. Refrigerate for 2-3 hours until fully set.
Step 8
Before serving, garnish with whipped cream, fresh strawberries, and mint if desired. Enjoy!
