Strawberry Custard Shortcrust Pie

Step 1
Start by making the dough. Use high-grade all-purpose flour.
Step 2
In a blender bowl, add flour, sugar, and baking powder. Add cubed butter. Blend until fine crumbs form. If you don’t have a blender, first cream softened butter with sugar, then add flour, baking powder, and egg, rubbing into crumbs by hand. The blender method is faster.
Step 3
Transfer the crumbs into a bowl, add the egg, and quickly knead into a shortcrust dough.
Step 4
Once the dough starts coming together into a ball, it’s ready. Don’t over-knead or the crust will be tough.
Step 5
Spread the dough evenly across the bottom and sides of a 9-inch (Ø 22 cm) baking pan, forming high edges. If the room is warm, chill the dough in the pan in the refrigerator.
Step 6
Prepare the filling. I use fresh strawberries, but frozen ones can be used too - thaw them, drain excess juice, and leave berries whole. Preheat oven to 355°F (180°C).
Step 7
Wash, dry, and hull the strawberries. Slice them, or if small, leave them whole.
Step 8
In a bowl, mix sour cream, eggs, sugar, and starch. Whisk until smooth.
Step 9
Pour some of the sour cream mixture onto the dough. Spread the sliced strawberries on top. Cover with the remaining mixture.
Step 10
Bake for about 50 minutes at 355°F (180°C), or longer if needed, until the sour cream filling sets. The edges will firm up while the center may still jiggle slightly. Time depends on your oven.
Step 11
Remove the baked pie from the oven and cool completely in the pan. Then refrigerate for 2 hours to let the filling set. Slice the strawberry shortcrust pie and serve. Enjoy!
