Strawberry Confiture from Strawberries

Thick, delicious, vibrant, and full-flavored strawberry jam without sterilization! This strawberry confiture for winter is quick to make if you soak the berries overnight. It has one secret ingredient that might surprise you. Definitely try it!

Preparation
Step 1
Choose fresh, undamaged strawberries. Small berries are preferred so you don’t have to cut them.
Step 2
Pour the berries into plenty of water, rinse well, and scoop them out. Do not drain in a colander immediately, as sand sinks to the bottom while berries float. Scoop with hands, then transfer to a colander to drain excess water.
Step 3
Remove the stems from the washed berries and place them in a bowl.
Step 4
Mix half of the sugar, citric acid, and a pinch of salt.
Step 5
Sprinkle this mixture over the berries and drizzle with alcohol. Let the berries sit for several hours (usually overnight) to release their juice.
Step 6
Sufficient amount of juice has released from the berries.
Step 7
Transfer everything to a cooking pot and place over heat. Add the remaining sugar. If the berries are sweet, reduce sugar slightly.
Step 8
Bring the berries to a boil. Stir to dissolve sugar. Reduce to low heat and simmer for 25-40 minutes, stirring occasionally to prevent excess foam.
Step 9
During cooking, the mixture will thicken. Remove from heat and let cool. During cooling, foam settles and the confiture becomes uniform in rich color.

Prepare jars: wash well and sterilize by any method (oven, microwave, or steaming). Pour boiling water over lids.
Step 11
Pour the warm confiture into prepared jars and seal with lids.
