Strawberry Compote for Winter

Preparation
Step 1
How do you make strawberry compote for winter without sterilizing it? First, prepare the strawberries. Choose the most beautiful, ripe, and fragrant berries, preferably small ones. Unripe, spoiled, or bruised berries are not suitable for preserving. Rinse the strawberries in a basin of water in small batches, gently stirring them a couple of times with your hands. Rinse the berries once more in clean water and carefully transfer them to a wide container so the water-soaked berries do not get crushed.
Step 2
Prepare all the remaining ingredients. Citric acid can be replaced with 1 tablespoon of lemon juice. Carefully remove the stems from the strawberries. They come off easily by hand.
Step 3
Prepare the jars for preserving. You can use glass jars of any size. I usually seal compotes in 3-liter jars (about 3.2 quarts). Be sure to wash the jars with baking soda. Then heat them either over steam or in the oven on a rack, upside down, for 7-10 minutes at 180°C (350°F). Put the jars into a cold oven, otherwise they may crack from the sudden temperature change. The lids should also be boiled for 5 minutes and then cooled.
Step 4
Put the prepared strawberries into a sterile jar so that they fill about 1/4 of the jar’s volume. For a richer compote, fill the jars one-third full.
Step 5
Add the sugar and citric acid to the jar with the berries.
Step 6
Bring clean water to a boil. Pour the boiling water into the jar with the strawberries. Try to pour the water into the center so the glass does not crack from the temperature change. When the liquid reaches the shoulders of the jar, seal it with a lid using a canning tool. Then carefully turn the jar over several times so all the sugar dissolves. This also helps check whether the seal is airtight. Thanks to the citric acid, the strawberries will begin to color the compote a bright shade.

Turn the jar with the strawberry compote upside down, wrap it in a blanket, and leave it that way until it cools completely. Enjoy your meal!
