Step 1

Prepare all the ingredients needed for baking.

Step 2

Place about 350g of strawberries into a food processor.

Step 3

Blend the strawberries into a purée consistency.

Step 4

In a bowl, mix the flour, baking powder, and baking soda.

Step 5

In a mixing bowl, add the butter and sugar. Beat until the mixture becomes fluffy.

Step 6

Then add the eggs one at a time, beating well after each addition.

Step 7

Pour in the cream, vanilla, and blended strawberries.

Step 8

Whisk everything until well combined.

Add the flour mixture to the batter.

Step 10

Gradually fold in the flour until a smooth, fluffy batter forms.

Transfer the batter into a baking tin lined with parchment paper.

Preheat the oven to 180°C (356°F) and bake the cake for about 18 minutes. Check with a wooden skewer - it should come out clean. Let the baked cake cool completely in the tin.

Once the cake has cooled, prepare the frosting. Place the cream cheese, sugar, and vanilla into a bowl.

Beat until it comes together.

Then pour in the cream and beat everything until a thick, stable frosting forms.

Transfer the cooled cake onto a flat surface (ideally directly onto the serving dish).

Spread the prepared frosting evenly over the top.

Decorate with strawberries and, if desired, other berries.

It is a fluffy, soft, full of flavour cake. It is very easy to make and the flavour will suprise everyone. This cake is perfect to celebrate 4th of July, you can even add blueberies, in addition to strawberries, to decorate the cake, so it resembles the American flag.
