Strawberries in Their Own Juice for Winter

Preserve the strawberry taste of summer for the whole winter! Strawberries in their own juice are prepared without adding water, so the berries keep their flavor and freshness. A pinch of citric acid helps preserve this homemade preparation for longer!

Preparation
Step 1
Select ripe berries without defects or damage. To help strawberries keep their shape, use firm, small ones. One kilogram (2.2 lbs) of strawberries makes about two 0.5 L jars (2 cups each).
Step 2
Sort the berries and remove the stems. Since this recipe is prepared without long heat treatment, remove all wrinkled or spoiled berries - this is very important.
Step 3
Rinse the strawberries thoroughly several times in cold water. Then dry them by placing on a kitchen towel or paper napkins for some time.
Step 4
Place the strawberries in a deep bowl. Sprinkle with sugar at a ratio of 300 g (1 ½ cups) sugar per 1 kg (2.2 lbs) berries.
Step 5
Leave the strawberries for 8-10 hours. Usually, I prepare them in the evening and leave overnight at room temperature, covered with a light towel or gauze. If preparing during the day and it’s too hot, keep them in the shade to prevent fermentation. After this time, a lot of juice will appear, and the berries will float in it.
Step 6
Wash jars and lids thoroughly, preferably with baking soda, and rinse several times. Sterilize them in any convenient way. Fill the jars with strawberries and juice (pack them tightly, they will shrink during sterilization). Add a pinch of citric acid on top of each jar - it will serve as a natural preservative.
Step 7
Cover the jars with sterile lids. Place them in a pot, add warm water up to the "shoulders" of the jars, and put on high heat. Lay a towel on the bottom of the pot. Once the water boils, reduce the heat and sterilize for 10 minutes (pint jars / 0.5 L) or 15 minutes (quart jars / 1 L).

Seal the jars with lids and turn them upside down. Cover with a towel and leave until completely cooled.
Step 9
Strawberries in their own juice are ready! Store the jars in the refrigerator or in a cool cellar.
