The recipe uses the weight of already cleaned strawberries. This quantity yielded 4 half-liter (2-cup) jars.
Preparation
Step 1
Choose ripe, juicy, firm strawberries without damage. Prefer medium or small ones. If the berries are tart, increase the sugar amount by about 7 oz (200 g) per 2.2 lb (1 kg). Sugar acts as the preservative in this recipe.
Step 2
First, wash the berries. Pour water into a deep bowl, add the strawberries, and gently stir with your hands. The sand will settle at the bottom.
Step 3
Carefully scoop out the berries by hand and transfer them to a colander. Let them sit to drain off excess water.
Step 4
Remove the green tops and leaves. Sprinkle a little sugar at the bottom of a large bowl and begin layering the strawberries, sprinkling sugar between each layer. Set aside about 5 oz (150 g) of sugar to use later. Let the berries sit for a few hours, stirring occasionally to help the sugar dissolve into syrup.
Step 5
As they sit, a lot of syrup will form and the strawberries will float in it. The sugar will gradually dissolve.
Step 6
Prepare jars by washing and sterilizing them (microwave, oven, or steam methods work). Let jars cool and dry completely. Fill the jars with berries and syrup, leaving a little space at the top.
Step 7
Sprinkle 2–3 tablespoons of the reserved sugar on top of each jar. This helps preserve the whole berries in syrup for longer.
Step 8
Boil the metal lids and seal the jars tightly. Store in the refrigerator. A sweet touch of summer for the long winter! Enjoy!
