Preparation
Step 1
How do you make zucchini stewed with meat and potatoes in a pan? Prepare the necessary ingredients. Instead of pork, you can use any other meat: beef, lamb, chicken, or turkey, but keep in mind that the cooking time will change. If your meat is frozen, thaw it beforehand. Instead of a tomato, you can use ketchup or tomato paste.
Step 2
Wash the pork, pat it dry, and cut it into small pieces.
Step 3
Wash the tomato and peel it. To do this, make a cross-shaped cut on top with a sharp knife. Place the tomato in boiling water for 1–2 minutes. Remove it, let it cool slightly, and peel off the skin.
Step 4
Peel the potatoes, wash them, and cut into large cubes. I cut all the vegetables into large pieces so they would not fall apart during cooking. If you want a softer, more uniform vegetable part, cut the vegetables smaller.
Step 5
Wash the zucchini and cut it into half-moons. If the zucchini skin is not too tough and the seeds are not very large, you do not need to remove them. My zucchini was very young, so I only removed the stem.
Step 6
Peel the garlic and finely chop it with a knife, grate it, or press it through a garlic press.
Step 7
Heat the vegetable oil in a deep pan or sauté pan. Fry the pork over medium heat until golden brown.
Step 8
Add the potatoes to the meat and pour in 100 ml / about 7 tablespoons of water.
Step 9
Cover the pan with a lid and stew the meat with the potatoes over medium heat for about 20 minutes.
Step 10
Add the zucchini, tomato, minced garlic, bay leaf, and ground paprika to the pan. Season with salt and pepper to taste. Mix everything gently.
Step 11
Bring the liquid to a boil and stew everything together for another 10–15 minutes over low heat under a lid.
Step 12
Divide the finished dish among plates and serve hot. Enjoy!
