Easy
About 1 hour.
Preparation
Step 1
How do you stew red beans with meat? First, prepare all the necessary ingredients. This time I cooked with pork, but you can also use beef or chicken - just keep in mind the cooking time may change. If your meat is from the freezer, thaw it in advance at room temperature.
Step 2
Soak the red beans in cold water for about 8 hours. It’s best to do this in the evening and leave them until morning.
Step 3
Cook the beans in a separate pot until tender.
Step 4
Rinse the meat and pat it dry with paper towels. Cut the pork into small cubes. Heat odorless vegetable oil in a deep frying pan. Add the meat to the pan.
Step 5
Briefly fry the pork, stirring constantly. Then pour in a small amount of water (40-50 ml / about 3 tbsp) and simmer, covered, over low heat for about 30-40 minutes. At the end, remove the lid and, if there is liquid left, evaporate it by turning the heat up to high.
Step 6
Peel the onion and carrot. Cut the bell pepper in half and remove the core and seeds. For a brighter dish, I used half a yellow pepper and half a red one. Rinse the vegetables, pat dry, and dice them.
Step 7
Add the onion, carrot, and bell pepper to the pan with the pork.
Step 8
Lightly sauté, stirring.
Step 9
Rinse the tomatoes and cut into large cubes. If you like, you can peel them first, but I usually don’t. Add the tomatoes to the pan. At this stage, you may also use a small amount of tomato paste or homemade hot pepper relish. Salt to taste, season with your favorite spices, and simmer over medium heat, covered, for about 5-10 minutes.
Step 10
Now it’s time for the beans. Add them to everything in the pan. If you use garlic, add it now as well, finely chopped. Mix again and simmer for 15-20 minutes over low heat, covered.
Step 11
Sprinkle the finished dish with chopped herbs such as parsley, dill, or green onion.
Step 12
Before serving, offer ground black pepper or allspice to taste. Done!
