Stewed Meat with Gravy

Tender, aromatic, incredibly delicious, it just melts in your mouth! Stewed meat with gravy will please all lovers of hearty, simple, and quick dishes. You can also cook it in a cauldron or deep skillet. Any side dish will do: boiled or baked vegetables, grains, or pasta. A quick lunch or dinner for the whole family.

Preparation
Step 1
If using frozen meat, defrost it properly in the refrigerator (on the bottom shelf). Use any refined vegetable oil. I use sunflower oil.
Step 2
Wash the meat and pat it dry with a paper towel - excess moisture will prevent browning and cause it to stew instead. Cut into strips. You can use beef, pork, chicken, or turkey. Keep in mind, cooking time and calories will vary. I used pork tenderloin.
Step 3
Peel the onion and chop it into small cubes.
Step 4
In a thick-bottomed pot or cauldron, heat vegetable and butter over high heat. Add the pork and fry, stirring, until golden brown.
Step 5
Add the chopped onion to the meat and fry everything together for 3-5 minutes while stirring.
Step 6
Pour 2.5 cups (600 ml) of hot water into the pot, add salt and ground pepper, and stir. You can also add spices to taste - I love using utskho-suneli (blue fenugreek). Bring it to a boil.
Step 7
Cover with a lid and simmer on low heat for 35-40 minutes until the meat is tender.
Step 8
In the remaining cold water (about 1/3 cup), dissolve the flour. This will help prevent lumps in the gravy.
Step 9
Pour the flour mixture into the pot with the meat. Then add tomato paste, bay leaves, and allspice.
Step 10
Stir everything well. Taste the gravy and add more salt if necessary. Simmer for another 10 minutes over low heat.
Step 11
Serve the stewed meat with gravy hot, with any side dish. Enjoy your meal!
