Stewed Chickpeas with Vegetables

Step 1
How do you make stewed chickpeas with vegetables in a pan? Prepare all the necessary ingredients. Instead of tomato juice, I used strained tomato pulp. You can also add other vegetables: bell pepper, zucchini, or eggplant would work well. To make the flavor brighter, add garlic and your favorite spices.
Step 2
Cover the chickpeas with water so that the water is 2 cm / about 0.8 inch above them, and leave them to soak for 8 hours.

After this time, the chickpeas will absorb almost all the water. Add about 1 cup more water and place over heat. Cook the chickpeas for about 1 hour. They should become soft. Add a little salt during cooking. When the chickpeas are ready, drain the remaining water.

Peel the onion and cut it into small cubes.

Wash and peel the carrot, then grate it on a coarse grater.

Heat the vegetable oil in a pan. Add the onion and carrot to the pan. Fry the vegetables over low heat for about 5 minutes.

Add the tomato juice to the vegetables, then add the sugar, salt, and pepper. Mix. Fry everything together for another 5 minutes.

Add the boiled chickpeas to the pan and mix.

Cover the pan with a lid and stew the chickpeas with vegetables for about 20 minutes. The exact time depends on the pan you use and the features of your stove. Then turn off the heat and let the dish stand for about 2 hours. Sprinkle the finished dish with fresh herbs. Enjoy!
