Easy
More than 1 hour.
Preparation
Step 1
Prepare the necessary ingredients. Wash the beans and soak them in cold water for several hours or overnight. During this time, they will become much softer, absorb water, and cook faster later.
Step 2
Boil the beans in boiling salted water until soft. This will take about 50 minutes, depending on how long the beans were soaked. Add salt to the beans 15 minutes before they are done. Drain the cooked beans in a sieve.
Step 3
Rinse the cabbage and remove the outer and damaged leaves. Shred the cabbage into thin strips. Wash the carrot thoroughly under running water, peel it, and grate it on a coarse grater.
Step 4
Peel the onion, rinse it, and cut it into small cubes. To keep the onion from stinging your eyes while cutting, rinse both the onion and the knife with cold water. You can use any onion you like, depending on how sharp you want the dish to be.
Step 5
Heat the vegetable oil in a pan over medium heat. The amount is approximate and depends on the size of the pan. Fry the carrot and onion for about 10 minutes, stirring from time to time.
Step 6
Add the prepared cabbage to the pan and mix. Pour in a little water. Stew the cabbage under a lid, stirring from time to time. Add a little more water if needed to prevent the vegetables from burning. Adjust the amount of water depending on how juicy the vegetables are and the size of the pan.
Step 7
Cook the cabbage over medium heat until not quite done. If you are using young cabbage, about 10–15 minutes will be enough. Winter cabbage will need about 25–30 minutes. Salt the cabbage to taste, add the tomato paste, and mix.
Step 8
Add the cooked beans to the cabbage, then add the basil and mix. You can add any other seasonings and spices to taste, but keep in mind that ready-made spice mixes may already contain salt. Cook the cabbage over low heat until fully done.
Step 9
Serve the stewed cabbage with beans sprinkled with finely chopped fresh herbs. It can be served either as a side dish with meat or as a separate dish. Enjoy!
