Squid in Sour Cream with Onions

A main dish and appetizer in one plate - in just 20 minutes! Squid in sour cream with onions can easily replace meat and diversify your menu. With vegetables and sauce, it becomes even more filling and delicious. Pairs well with any side dish!

Preparation
Step 1
Any sour cream fat content will work. I used 15%.
Step 2
You can use pre-cleaned squid without skin or with skin. If using uncleaned squid, remove the skin, insides, and chitin plate. To make cleaning easier, dip the squid in boiling water for 30 seconds. Slice the prepared squid bodies into rings and cut the tail fins into strips.
Step 3
Slice the onion into half-rings or cubes, whichever you prefer. You may also mince 1 garlic clove.
Step 4
Peel the carrot and grate it on a coarse grater.
Step 5
Heat vegetable oil and butter in a skillet over medium heat.
Step 6
Add the onion and carrot. Sauté, stirring, until vegetables are soft, about 5 minutes.
Step 7
Add sour cream and tomato paste to the vegetables. Season with salt and pepper, stir well. Reduce the heat to low and simmer for 1 minute, stirring.
Step 8
Add the squid to the skillet and cook together for no longer than 3 minutes, otherwise the squid will become rubbery and unpleasant.
Step 9
When the squid is done, remove the skillet from heat, cover with a lid, and let it rest for 10 minutes.
Step 10
Serve the squid on plates, sprinkle with fresh parsley. This dish can be served as an appetizer or as a main course with any side dish. Enjoy!
