Spring Rolls with Salmon, Rice, and Avocado
A healthy, light, unbelievably tasty snack! Spring rolls with red fish, rice, and avocado are made quickly - in about 10 minutes. You can vary the filling to your taste, combining different foods: vegetables, grains, meat, fish, seafood.

Step 1
How to make spring rolls with rice and red fish? Prepare all the ingredients. Rinse the rice until the water runs clear, then cook until done. I had a fresh salmon steak - I salted it and refrigerated it for 1 hour. For the rolls, you can use lightly salted or lightly smoked fish.
Step 2
Wash the avocado and cucumber. Pat them dry with paper towels. Cut the avocado in half, remove the pit with a knife, and peel it. If the cucumber has thick skin, peel it. Slice the avocado thinly, and cut the cucumber and fish into thin strips.
Step 3
Soak the rice paper in cold water. Leave it until it becomes soft and elastic (about 10-15 seconds).
Step 4
Carefully place the sheet on a surface moistened with water. Put the red fish in the center.
Step 5
Lay green lettuce leaves over the fish, then add a layer of rice and cucumber.
Step 6
Place a piece of avocado on top. The order of layers can be any, as you prefer. To keep the filling from being dry, you can add a scant 1 tsp of fermented curd cheese.
Step 7
Roll the spring rolls the same way you would roll filled crepes or cabbage rolls: fold the bottom up first, then fold in the sides, and roll into a neat log. Sprinkle the finished rolls with sesame seeds.

Done - serve with a lemon wedge and soy sauce!

Spring rolls are also very tasty if you quickly sear them on a grill pan with a small amount of vegetable oil for a few seconds on each side, or in a multi-baker/sandwich press.
