Easy
About 30 min.
Preparation
Step 1
Choose high-quality condensed milk, with no vegetable fats or additives. The ingredients should only be milk and sugar. The taste and quality of the cake depend on it.
Step 2
Take a deep bowl, crack in the eggs, and beat with a hand whisk. The sponge rises due to the baking powder, not the eggs, so a mixer is unnecessary.
Step 3
Pour the condensed milk into the eggs. Mix with a whisk until smooth.
Step 4
Sift the flour into the bowl (you can do this separately twice). This removes impurities and enriches it with oxygen, making the sponge airy. Then sift in starch and baking powder. I used cornstarch, but potato starch works too (use slightly less, about 1 tbsp without a heap).
Step 5
Mix the batter well with a whisk. It should be smooth and flow like thick sour cream. The flour amount may vary - adjust to consistency. I usually add a bit less first, then sprinkle more while mixing if needed.
Step 6
Prepare a baking form. I used a 7.5-inch (19 cm) springform pan, lined the bottom with parchment, and greased sides with butter. A silicone mold or cake ring works too. The recipe is also great for rolls or square pans. Pour in the batter.
Step 7
Immediately bake in a preheated oven at 350°F (180°C) for 25-40 minutes, depending on your oven and cake height. Do not open the oven for the first 15 minutes to prevent collapse. Check readiness with a wooden skewer - it should come out dry. Remove from oven and cool completely.
Step 8
Wrap the cooled sponge in plastic wrap and refrigerate - it will soften and won’t crumble when sliced. Then you can make a cake with it or serve it as a simple pie, dusted with powdered sugar. Enjoy!
