Spinach with Eggs in a Pan

Preparation
Step 1
The number of eggs is approximate; you can use more or fewer as desired.
Step 2
Peel the onion, rinse under running water, and pat dry with paper towels. Slice it into thin half-rings, quarter rings, or finely chop.

Wash the eggs thoroughly. Place the spinach in a colander and rinse under running water. Tear large leaves into smaller pieces and leave small ones whole.
Step 4
Heat odorless vegetable oil in a skillet. Add the onion and sauté, stirring, until it becomes translucent.
Step 5
Add spinach to the onions and mix everything together. Lower the heat to minimum, cover with a lid, and let the greens cook until tender. Young leaves will only need about 1 minute.
Step 6
Season the spinach with salt to taste and, if desired, add your favorite dried herbs. I used a pinch of ground nutmeg and a mix of Provencal herbs.
Step 7
Make several small wells in the spinach mixture. The number of wells depends on how many eggs you are using.
Step 8
Carefully crack one egg into each well.
Step 9
Cover the pan and cook until the eggs reach your preferred doneness.
Step 10
Sprinkle the finished dish with freshly ground pepper to taste. Serve hot and enjoy!
