Spinach pasta

Preparation
Step 1
Cook the pasta in a large pan of boiling salted water according to the packet instructions until al dente.
Step 2
Meanwhile, heat the olive oil in a frying pan over medium heat. Add the grated garlic and chilli flakes (if using) and cook, stirring, for 1 minute, until fragrant.
Step 3
Add the spinach and cook for 2-3 minutes, stirring frequently, until wilted. Stir in the mascarpone, cream, and nutmeg, then season generously with salt and freshly ground black pepper. Bring the mixture to a gentle simmer, then remove the pan from the heat and stir in the Parmesan until melted and smooth.
Step 4
Drain the pasta, reserving a ladleful of the cooking water. Add the pasta to the sauce along with the reserved water, and toss over low heat until the pasta is evenly coated and glossy.
Step 5
Serve immediately, topped with extra Parmesan and a sprinkle of freshly ground black pepper.
