How do you prepare spicy winter cabbage with beets? Prepare the necessary ingredients.

Rinse the white cabbage under water and remove the upper damaged leaves with spots or blemishes. Cut the cabbage head in half so that each half still has part of the core holding the leaves together. Carefully cut the core out of both halves so the cabbage does not fall apart in your hands. Cut the cabbage across the veins into strips 2–2.5 cm / about 0.8–1 inch wide, then cut the strips into squares.
Step 3
Rinse the carrots under water, peel them, and cut into rounds. Scrub the beets thoroughly under running water with a kitchen brush, peel them, and cut them into small, thin slices. Peel the garlic and cut it into cloves or slices.
Step 4
Place the prepared vegetables in a large pot, alternating layers of cabbage with carrots, beets, and garlic.
Step 5
To make the brine, pour the water into a pot, then add the sugar, salt, bay leaf, and black peppercorns. Mix everything and place the pot over heat. Bring the brine to a boil, turn off the heat, pour in the vinegar, and mix again.
Step 6
Pour the slightly cooled brine over the vegetables arranged in the pot. Place a plate on top, then put a small jar filled with water on the plate as a weight. Leave the cabbage under the weight for 2–3 days, then transfer it into sterilized jars and seal them. Many home cooks prepare this appetizer in large batches and pack it into 3-liter / about 3-quart jars. However, if the family is small, it is better to use smaller jars. Store this preserve in a cool place. Enjoy!
