Spicy Mexican Pizza

Step 1
How do you make spicy Mexican pizza? Start with the dough. Prepare all the necessary ingredients. Use good-quality all-purpose flour. Sift it first to remove any impurities and to aerate it, which helps the dough rise well.
Step 2
How do you make the dough? Add sugar and yeast to warm water (37-40°C / 99-104°F). Stir with a spoon until the sugar fully dissolves. If you don’t have a kitchen thermometer, test the temperature by placing a drop of water on the inside of your wrist: if it feels neutral - not cold and not hot - the temperature is right.
Step 3
If the water is too cool, the yeast will work more slowly and it will take longer. If it’s too hot, the yeast will die and the dough won’t rise. Add 2 tablespoons of flour, stir, and let stand for 10 minutes. If a foamy cap forms on the surface, the yeast is active and you can continue.
Step 4
For kneading, use a deep bowl that’s convenient for mixing wet and dry ingredients. Add half of the flour to the bowl. Add salt and mix it into the flour so the dough is evenly seasoned. Make a well in the center and pour in the yeast mixture. Stir with a spoon.
Step 5
Add the remaining flour in small portions to get the right dough consistency. When it becomes hard to mix with a spoon, switch to kneading by hand. Knead thoroughly. The dough should be soft and slightly sticky.
Step 6
Grease the bowl with oil so the dough doesn’t stick. Also lightly oil your hands and gently punch down the dough. Cover the bowl with a towel so the dough doesn’t dry out and can rise. Leave in a warm place for about 1-1.5 hours.
Step 7
While the dough rises, prepare the toppings. Gather the ingredients. Choose any cheese that melts well. Use smoked or semi-smoked sausage.
Step 8
How do you prepare the toppings? Wash and dry the tomato, remove the stem end, and slice into thin rings. Wash the pepper, remove the stem and seeds, and slice crosswise into thin half-rings.
Step 9
Slice the sausage into thin rounds - this is the standard cut for pizza. Grate the cheese on a coarse grater.
Step 10
By now the dough should have increased several times in size. From this amount you can make one large pizza or two smaller ones. I’m making one about 35 cm (about 14 in) in diameter. Press the dough into a round. Leave the edges thicker to form a rim.
Step 11
Spread ketchup and chili sauce evenly over the dough.
Step 12
Scatter the cheese, then add the sausage and tomatoes; next add the capers and corn. Finish the toppings with chopped chili pepper. Bake for 15-20 minutes on the middle rack in an oven preheated to 200°C / 392°F on the top/bottom heat setting. Baking time depends on your oven. The crust will rise and lightly brown, and the cheese will melt completely. Serve hot. Enjoy your meal!
