Preparation
Step 1
How do you make Spaghetti Bolognese with ground meat and tomato paste? Prepare the ingredients. You can use any pasta you like. I used spaghetti. Choose pasta made from durum wheat, it is both tastier and better for you. The ground meat can be any kind: beef, pork, poultry, or mixed. I used a mix of beef and pork. If you do not have celery, you can leave it out. In a simplified version, you can even skip the carrot. But of course, it tastes better with vegetables.
Step 2
Peel the onion and cut it into small cubes.
Step 3
First wash the carrot under running water with a brush. Then peel it. Cut the carrot into small cubes. You can also grate it on a coarse grater. But I prefer when all the vegetables are cut the same way.
Step 4
Cut the celery stalk into the same cubes as the other vegetables.
Step 5
Heat a deep frying pan over medium heat. Pour in the vegetable oil. Add the vegetables. Fry them over low heat for 5 minutes, stirring occasionally with a spatula.
Step 6
Add the ground meat to the vegetables. Using a spatula, first stir it, then break it up well so there are no lumps. The finer the meat is in the sauce, the tastier the sauce will be. Fry the ground meat with the vegetables for about 10 minutes.
Step 7
Add the tomato paste to the meat. Add the seasoning, salt, and pepper. Pour in the water.
Step 8
Mix all the sauce ingredients thoroughly so the tomato paste is distributed evenly.
Step 9
Cover the pan with a lid and leave the sauce to simmer over low heat for 40 minutes. Check whether the water has evaporated. If it gets low, add more. The sauce should remain fairly liquid.
Step 10
When the sauce is almost ready, boil the pasta. Put a large pot of water on the heat. There should be a lot of water, about 1 liter for every 100 grams of pasta. Bring the water to a boil and add salt. Put the pasta into the water and immediately stir it with a spoon so it does not stick to the bottom. Cook the pasta according to the instructions on the package. Taste it 1 minute before it should be done. The pasta should remain slightly undercooked, just a little. Pasta like this is much tastier than overcooked pasta.
Step 11
Drain the pasta in a colander. Bolognese sauce is usually not mixed with the pasta in the pan the way other sauces are. First the pasta is placed on the plate, and the sauce is added on top. When serving, you can sprinkle the pasta with grated cheese and decorate it with basil leaves.
