Soup with Meatballs and Dumplings

Step 1
First, prepare the necessary ingredients and spices for a hearty, aromatic homemade soup.

Start making the dumpling dough. Using a fine grater, grate one pre-boiled potato (in its skin, without salt) into a deep bowl.

Crack one chicken egg, separate the white from the yolk, and place the yolk into the bowl with the grated potato.

Add nutmeg and a little salt to taste to the potato and egg yolk mixture and mix well.
Step 5
Add three tablespoons of all-purpose wheat flour to the bowl and mix everything together.

Add a little vegetable oil to the potato dough and knead it by hand.

Knead the dough in the bowl for five minutes until uniform, then cover it with plastic wrap and set aside for 20-30 minutes.

To prepare the meatballs, place 250 g (about 9 oz) of mixed ground meat into a deep bowl. Add half a finely chopped onion, salt to taste, a mix of ground peppers, and one egg white.

Mix the ingredients thoroughly by hand, then form the meat mixture into a ball and pound it several times in the bowl.

Take small portions of the meat mixture, form meatballs, roll them in flour, and place them on a plate.

Take preferably a 3-liter pot and place it on the stove. Add two tablespoons of vegetable oil, half a finely chopped onion, and sauté over high heat.

Cut half a carrot into sticks and add to the pot with onion, sautéing together.

Cut two peeled potatoes into arbitrary pieces, add them to the pot with vegetables, stir, and heat for 2-3 minutes.

Pour 1.5 liters (about 6.3 cups) of water into the pot with vegetables, cover with a lid, and bring to a boil over high heat.

Add the meatballs to the pot, cover with a lid, and bring the soup back to a boil over high heat.

Place the dumpling dough on a floured surface, knead slightly, shape it into a sausage shape, and cut into small pieces to form dumplings.

Reduce the stove heat to low, stir the soup, cover with a lid, and cook for ten minutes.

Add the dumplings to the pot, season with bay leaf, dried herbs, salt, and a mix of ground black and red peppers. Stir well, cover, and cook for seven minutes over medium heat until fully cooked.
