Soup with Canned Green Peas

Step 1
What meat is best? You can use poultry, pork, or beef. You may also cook the soup on vegetable broth without meat - a great vegetarian option.
Step 2
Peel potatoes and onion. Rinse all vegetables. Cut potatoes into medium or large cubes or sticks. Slice bell pepper into half-rings, dice tomatoes, and slice onion into quarters or half-rings.
Step 3
For best results, use a thick-walled pot or cauldron. Heat a little vegetable oil in the pot. Fry the meat briefly over high heat, then reduce the flame, cover with a lid, and simmer pork for about 30 minutes. Meat will usually release juice during this stage. Check after 5-10 minutes to make sure it doesn’t burn; if liquid is insufficient, add a little water.
Step 4
Add potatoes, bell pepper, tomatoes, and onion to the meat.
Step 5
Salt to taste, add a pinch of ground coriander and black pepper. You can use any spices you like. Add water - how much depends on whether you prefer a thicker or thinner soup. I like hearty soups, so I added just enough water to slightly cover the ingredients.
Step 6
Stir everything, increase heat to high, bring to a boil, then reduce to medium. Cook covered until potatoes and meat are tender (about 20-30 minutes).
Step 7
At the end, add canned green peas and finely chopped or pressed garlic. Let the soup simmer for 2-3 minutes, then remove from heat.
Step 8
When serving, offer fresh herbs and ground black pepper for each bowl.
