Soft Yeast Buns with Apples (Baked in the Oven)

Preparation
Step 1
First, prepare all the necessary ingredients at room temperature for making golden soft buns with apple filling.
Step 2
To make the yeast dough, take a large bowl and a fine sieve. Sift in 4 cups (500g) of all-purpose flour, then add 1/3 teaspoon of salt, 1 teaspoon of vanilla sugar, 1 teaspoon of baking powder, 2¼ teaspoons (7g) of instant dry yeast, and mix all the dry ingredients together.
Step 3
In another large bowl, crack one egg and add only the egg white of a second egg (save the yolk for brushing the buns later).
Step 4
Add 1/4 cup (50g) of sugar to the eggs and beat well until smooth to help make the dough fluffier.
Step 5
Pour in 1 cup (250 ml) of warm milk and mix thoroughly.
Step 6
Gradually add the flour mixture to the wet ingredients, mixing until a soft dough starts to form.
Step 7
Add 3½ tablespoons (50g) of softened butter to the dough and knead thoroughly for 10 minutes until the dough becomes smooth and uniform.
Step 8
Grease the dough with 1 tablespoon of vegetable oil, place it back in the bowl, cover with a towel, and let it rise in a warm place for 1 hour.

For the filling, peel 3 apples and cut them into small cubes.
Step 10
In a heated pan, melt 3 tablespoons (40g) of butter, add the apples, sprinkle in 1/4 cup (50g) of sugar, and cook over medium heat until they release juice. Then add cinnamon to taste, stir, and turn off the heat.
Step 11
Lightly flour your work surface and place the risen dough on it. Knead briefly to release the carbon dioxide.
Step 12
Divide the dough into 16 equal parts, roll each into a ball, place on the table, and cover with a towel.
Step 13
Lightly flour your surface again, flatten one dough ball into a thin round disk, and trim both sides with a knife, leaving a small strip in the center.
Step 14
Place 1 tablespoon of the apple filling (without juice) in the center of the disk and firmly pinch the edges together.
Step 15
Flip the filled dough over and braid the cut edges into a decorative plait, tucking it underneath to shape a bun.
Step 16
Line a baking sheet with parchment paper, place the buns on it, cover with a towel, and let rise in a warm place for 20 minutes.
Step 17
Brush the risen buns with the reserved egg yolk mixed with a bit of warm milk. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes until golden brown.
Step 18
Remove from the oven and transfer the baked buns to a serving dish.
