Preparation
Step 1
Prepare the ingredients. For best results, bring the milk and egg to room temperature beforehand. The butter will be melted, so it does not need to be softened in advance.
Step 2
Melt the butter using your preferred method, such as in the microwave, over a water bath or in a small saucepan on the stove.
Step 3
Pour the milk into a bowl. Separate the egg into yolk and white, adding the yolk directly to the milk. Add the regular sugar and vanilla sugar. Adjust the amount of sugar to taste; with the original amount, the waffles are only mildly sweet.
Step 4
Mix the ingredients with a hand whisk until combined.
Step 5
Mix the baking powder into the flour, then sift the mixture into the bowl with the milk. Add a pinch of salt and pour in the melted butter.
Step 6
Whisk everything together until the batter is smooth and even.
Step 7
Using an electric mixer, beat the egg white until stiff peaks form.
Step 8
Add the whipped egg white to the batter and gently fold it in with a hand whisk or spatula. The batter will become lighter and slightly thinner. Do not overmix so the whipped egg white retains as much air as possible.
Step 9
Preheat the waffle maker. Lightly grease the top and bottom plates with neutral vegetable oil using a pastry brush. Pour a couple of tablespoons of batter into the center and close the lid.
Step 10
Cook each waffle until golden, adjusting the time to your waffle maker. Remove with a spatula and continue with the remaining batter. The original recipe makes about 10 waffles in a waffle maker with approximately 4-inch plates.
