Soda Fritters Without Yeast
Very simple, very quick, very tasty, perfect for every day. You can make soda fritters without yeast in 20 minutes. This is a great breakfast dish that the whole family will enjoy. Another special feature of this recipe is that the batter is mixed without eggs.

Step 1
How do you fry soda fritters without yeast? Prepare all the ingredients. Use kefir of any fat content, though the fritters will, of course, taste better with a richer kefir. I prefer wheat flour of the first or second grade. This kind of flour has a slightly creamy color and, in my opinion, works very well for this type of baking. But choose the flour you prefer.
Step 2
Warm the kefir beforehand so that it curdles slightly. You can warm it on the stove or in the microwave. Pour the kefir into a deep bowl in which you will mix the fritter batter. Use a larger bowl right away, because the mixture will increase in volume a lot.

Add the baking soda to the kefir and mix well.
Step 4
Add the sugar to the kefir and a little salt. If you like, especially if you are cooking for children, you can also add flavorings: a teaspoon of vanilla sugar, a pinch of vanilla, or ground cinnamon would work well here too.
Step 5
Mix all the ingredients together. The kefir will begin to bubble, and the mixture will increase significantly in volume.
Step 6
Add the flour in portions. Keep in mind that you may need more or less flour than I did. Judge by the consistency of the batter.
Step 7
For baked goods, I always recommend sifting the flour. During sifting, the flour is enriched with air, which means the finished product will turn out airier. Always sift the flour.
Step 8
Mix the batter well so there are no lumps. The batter will be quite thick, with a consistency like rich sour cream.
Step 9
Prepare the skillet. For pancakes and fritters, I prefer a cast-iron skillet, but you can use a ceramic one or any other kind, preferably with a nonstick coating. Pour vegetable oil into the skillet and heat it well. Spoon a little batter onto the skillet and fry over low heat for about 3–5 minutes, then carefully turn it over.
Step 10
Fry the fritters on the other side for about 2–3 minutes. By the way, you do not have to pour oil into the skillet; you can simply brush it with a small amount of oil. Serve the fritters with sour cream, sweetened condensed milk, or jam. Enjoy your meal!
