Step 1
How do you make a salad with smoked chicken, carrot, and fresh cucumber? Prepare the ingredients. You can use any part of smoked chicken: drumsticks, leg quarters, or breast. Fresh cucumber can be replaced with pickled or salted cucumber. Mayonnaise can be fully or partly replaced with sour cream, or you can make mayonnaise at home.
Step 2
Wash the carrots and potatoes with a brush under running water. Put them in a pot, cover with water, and boil at a gentle simmer until tender. To check doneness, pierce with a knife - if soft, they’re done. Remove from the water and let cool. Peel the vegetables. Cut the potatoes into small cubes.
Step 3
Cut the carrots into cubes as well.
Step 4
Remove the chicken meat from the bones and cut it into cubes.
Step 5
Wash the fresh cucumber and pat dry. If the skin isn’t tough, damaged, or bitter, you can leave it on; otherwise peel it. Trim the ends and dice the cucumber the same way as the other ingredients.
Step 6
Wash the green onions, pat dry, and finely chop.
Step 7
Put the prepared ingredients into a bowl: smoked chicken, potatoes, carrots, cucumber, and green onions. Add mayonnaise or sour cream; if you like, add a little salt. Toss the salad. Serve in a salad bowl or shape it using a serving ring.
