Smoked Chicken and Mushroom Salad

Preparation
Step 1
Prepare the ingredients. Smoked chicken breast works well, but you can use another part of the chicken. Fresh mushrooms can be used instead of canned ones. Choose a medium onion and carrot. Dress the salad with mayonnaise or replace it with a mixture of sour cream and mustard.
Step 2
Rinse and peel the onion and carrot. Coarsely grate the carrot and chop the onion. Heat the vegetable oil in a frying pan. If using fresh mushrooms, clean and slice them, then fry them first. Add the onion and carrot and cook until tender. If using canned mushrooms, fry the onion and carrot first, then add the drained mushrooms and heat them through.
Step 3
Remove the smoked chicken breast from the bone, if necessary, and discard the skin. Cut the meat into small cubes and place it in a deep salad bowl.
Step 4
Leave the fried mushrooms and vegetables to cool, then add them to the chicken. For a more decorative presentation, reserve a few mushroom halves for garnishing the salad.
Step 5
Add the mayonnaise, salt and ground black pepper to taste. Mix well. Before serving, sprinkle with chopped fresh dill or parsley, if desired.
Step 6
Serve the salad immediately as an appetizer or a filling main dish. It pairs particularly well with potato dishes.
