Preparation
Step 1
How to fry pangasius in a skillet quickly and delicious? First, take the fish fillet out of the freezer and leave it at room temperature until fully thawed. If you need to thaw it fast and don’t have time to wait, you can cover the pangasius with cold water. After thawing, drain the water and pat the fillet dry with paper towels to remove excess moisture.
Step 2
Cut the fillet into 2 pieces. Sprinkle each piece with salt, ground pepper(s), and garlic powder. Flip the pieces and season the other side the same way. Let the fish marinate for about 5 minutes - this is enough. Meanwhile, peel the onion and rinse it. I usually use red onion or shallots; they look very nice and appetizing in the finished dish.
Step 3
Heat vegetable oil in a thick-bottomed skillet. If you prefer, you can use butter instead of vegetable oil. Reduce the heat to medium and add the pangasius pieces to fry. Cook on one side until browned (about 2 minutes).
Step 4
Then carefully flip the pieces so they don’t break, and cook until the other side is nicely browned as well.
Step 5
Remove the cooked pangasius to a plate. Into the skillet with the oil used for frying the fish, add the onion sliced into half-rings or thin strips. Then squeeze in the juice of half a lemon and, stirring, cook for a few seconds until the onion aroma appears.
Step 6
Spoon the fried onion onto each piece of fish. Scoop up a little of the fragrant oil with lemon juice and drizzle it over the fish. Serve with a lemon wedge and fresh vegetables or herbs.
