Skillet Minced-Meat Brizol Roll

Step 1
How do you make brizol with minced meat in a skillet at home? Prepare the ingredients. Any minced meat works - beef, pork, poultry, or a mix. Use size C1 eggs. Any cheese works - hard, semi-hard, or soft (like mozzarella). The key is that it’s tasty, high quality, without non-dairy fat substitutes, and melts well.
Step 2
Since the egg-and-meat pancake cooks quickly, prep the filling in advance. Slice the tomato into thin wedges.
Step 3
Cut the cucumber into thin matchsticks.
Step 4
Grate the cheese on a fine grater - this helps it melt faster.
Step 5
Press one clove of garlic into the mayonnaise and mix. You can also add finely chopped herbs to the sauce.
Step 6
Salt the eggs and beat with a fork until smooth. Salt and pepper the meat. Knead it well and divide it into two portions (for two brizols).
Step 7
Spread plastic wrap on a board and place a ball of minced meat on it. Cover the meat with another layer of wrap. Roll it out into a very thin patty with a rolling pin. Make it the same diameter as the skillet you’ll use. Mine was 24 cm / 9.5 in.
Step 8
Heat a skillet over medium heat. Add vegetable oil. Pour in half of the beaten egg mixture and spread it like a pancake. Remove the top layer of wrap from the meat patty. Transfer the meat on the bottom wrap and flip it onto the egg pancake. Remove the wrap.
Step 9
Cook the brizol over low heat, covered, until the egg is nicely golden, then flip to the other side. Cover again and cook for about 5 more minutes.
Step 10
Slide the pancake onto a plate, egg-side down. Spread with mayonnaise. Top with the sliced tomato and cucumber. Sprinkle with cheese.
Step 11
Roll up the pancake while it’s still hot. Cook the second brizol the same way.
Step 12
Serve right away. Enjoy your meal!
