Preparation
Step 1
How do you make skillet lazy cabbage rolls without cabbage with rice? Prepare all the necessary ingredients. For this dish, you can use not only ground pork, but also ground beef or a mixture of different meats. I used a mixture of pork and beef. Choose a larger carrot. My onion was quite large, so I used only half.
Step 2
Rinse the rice several times until the water runs clear. Pour boiling water over it and wrap it in a towel. There is no need to boil the rice. While you prepare the other ingredients, the rice will reach the right stage on its own. This will take about 15 minutes. Then drain off the excess liquid. This way the rice will stay fluffy and become half-cooked. If you boil it, there is a risk of overcooking it into mush.
Step 3
Wash and peel the onion and carrot. Finely chop the onion and grate the carrot on a coarse grater.
Step 4
Heat a little vegetable oil in a frying pan and sauté the onion over medium heat, stirring, until translucent. This will take 2-3 minutes.
Step 5
Add the grated carrot to the pan with the onion and fry everything together for another 2-3 minutes.
Step 6
Place the ground meat in a deep bowl. Add the prepared rice, the sautéed vegetables, salt, pepper, and khmeli-suneli. At this stage, you can also add your favorite spices. Mix everything well. If you wish, you can add 1 raw egg, but even without the egg the cabbage rolls hold their shape very well.
Step 7
Shape the lazy cabbage rolls into oblong cutlet-like patties, wetting your hands in cold water so the meat mixture does not stick to them.
Step 8
In a frying pan, I used the same one in which I sautéed the vegetables, heat some vegetable oil and place the lazy cabbage rolls in it. Fry them for 2-3 minutes on each side.
Step 9
While the cabbage rolls are browning in the pan, prepare the sauce. For this, mix the sour cream and tomato paste with 1 glass of water and add salt to taste. To make the sauce smooth, you can use an immersion blender. I used a regular whisk.
Step 10
Pour the tomato and sour cream sauce over the lazy cabbage rolls and add the bay leaf. Simmer the cabbage rolls under a closed lid over low heat for 10-12 minutes.
Step 11
Serve the finished lazy cabbage rolls sprinkled with finely chopped fresh herbs. Enjoy your meal!
