Skillet Lavash Breakfast with Egg and Cheese Filling

How do you make a skillet lavash breakfast with cheese and eggs? Prepare the ingredients. Use large, extra-large eggs. If the eggs are small, use 5.

Dice the bell pepper into small cubes.
Step 3
Grate the cheese on a coarse grater.
Step 4
Rinse the herbs, pat dry, and finely chop. Besides the listed herbs, you can also add chopped green onion.

Cut 2 circles from the lavash. The first should match the diameter of the skillet, and the second should be slightly larger. Lavash dries out very quickly, so cut the circles last -once the vegetables and herbs are ready. Until then, keep the lavash in a tightly sealed bag.

Grease the bottom and sides of the skillet with vegetable oil. Lay in the larger lavash circle so it forms small sides.

Carefully crack the eggs onto the lavash one by one, trying to keep the yolks intact. Season the eggs with salt and pepper.

Sprinkle most of the grated cheese on top.

Add the chopped herbs and bell pepper, keeping a little back to garnish the top.

Place the second lavash circle on top, pressing it down with the edges of the bottom lavash.

Set the skillet over medium heat and cook covered for about 5 minutes. The bottom lavash should brown, the eggs should set, and the cheese should melt.

Carefully flip the lavash to the other side.

Sprinkle with the remaining cheese. Remove the skillet from the heat and leave covered for 5 minutes so the cheese melts.

Transfer the finished eggs-in-lavash to a serving plate. Sprinkle with the remaining chopped herbs and diced bell pepper. Enjoy!
