Skillet Katlama Flatbreads with Onion
A fairly simple recipe for excellent water-based dough! Katlama - original layered flatbreads made from wheat flour dough on water with onion, pan-fried in a skillet - will surely please many and pleasantly surprise with their wonderful taste!

Step 1
How to make the tastiest layered onion flatbreads (Katlama) from wheat flour on water? Prepare the ingredients you’ll need to make delicious flatbreads that are a great alternative to bread.
Step 2
Take a large bowl and sift in 500 g all-purpose wheat flour in parts through a fine sieve. Add 1 tsp salt and mix.
Step 3
Pour 300 ml warm boiled water (about 1 1/4 cups) into a glass, then pour it into the bowl with flour. Mix well and knead the dough.
Step 4
Gather the dough in the bowl with your hands, add 1 Tbsp vegetable oil, and continue kneading by hand for about 5-7 minutes until smooth.
Step 5
Leave the dough in the bowl for 30 minutes, covering it with a plate or kitchen towel.
Step 6
After the resting time, transfer the dough to the table and knead briefly, then shape it and divide into 5 equal parts.
Step 7
Roll each piece into a ball and place them on the table.
Step 8
Lightly dust the work surface with flour and roll out each dough ball into a fairly thin round, about 1-2 mm thick and about 33 cm / 13 in in diameter.
Step 9
Melt 100 g butter (about 7 Tbsp) and brush each flatbread with it one by one.
Step 10
Finely chop 2 medium onions and spread them over each flatbread in an even layer.
Step 11
Roll each flatbread into a tight log and press it slightly.

Coil each log into a spiral (“snail”) shape.
Step 13
Place the spirals on a plate and put into the freezer for 15-20 minutes.

After that, roll out each piece again into a flatbread sized to fit your skillet.

Place each flatbread into a dry skillet and fry over medium heat for 3 minutes on one side.

Flip the flatbreads after 3 minutes.

Cover the skillet with a lid and continue frying until fully cooked, another 2-3 minutes.

If you like, brush the flatbreads with 20 g melted butter (about 1 1/2 Tbsp).

Transfer the cooked flatbreads to a plate and serve.
