Preparation
Step 1
How to make onion flatbreads? Prepare the ingredients needed for skillet flatbreads with green onions. I used all-purpose wheat flour, but first- or second-grade flour also works.
Step 2
For the dough, use a wide, sturdy bowl that’s convenient for mixing. Sift the flour through a fine sieve to aerate it - this helps make the dough more pliable. Reserve a small portion of the flour (20-25 g / about 2-3 Tbsp) for kneading.
Step 3
Make a well in the flour and pour in vegetable oil to make the dough elastic.
Step 4
Heat the water until moderately hot and dissolve the salt in it. Pour the hot water into the flour. Why hot? It makes the dough softer and more workable.
Step 5
Mix everything at first with a spoon.
Step 6
Then knead the dough by hand. On a floured surface, knead until smooth and uniform. The dough should be moderately firm and well kneaded. Wrap it in a towel or plastic wrap and rest for 20-30 minutes. This allows the flour and water to combine evenly, making rolling easier and the dough more elastic.
Step 7
For the filling, rinse the green onions in cold water and pat dry. Finely chop them.
Step 8
Lightly dust the table with flour and roll the dough into a round sheet that’s not too thin.
Step 9
Spread the chopped green onions over the dough, leaving a 1.5-2 cm (about 1/2-3/4 inch) border so the filling doesn’t squeeze out when rolling. You can gently press the onions down with your hand.
Step 10
Roll the dough up into a log.
Step 11
Cut the log into pieces depending on the size of flatbreads you want.
Step 12
Turn each piece cut-side up, press it down with your hand, then roll it with a rolling pin into a flatbread that isn’t too thin.
Step 13
Heat a little vegetable oil in a skillet. Fry the flatbread over moderate heat until golden on one side.
Step 14
Flip and fry the other side until golden. While one flatbread is frying, you can roll out the next one.
Step 15
Stack the finished flatbreads on a plate so they stay warm longer. They’re also tasty once cooled. Enjoy!
