Preparation
Step 1
How to braise tomatoes with onion and garlic in a skillet? First, prepare all the necessary ingredients. Choose tomatoes that are firm, springy, and juicy. You can use regular yellow onion or red onion. I used both, which made the finished dish more colorful and appetizing.
Step 2
Peel the onion and garlic. Rinse the tomatoes, herbs, onion, and garlic under cold running water.
Step 3
Cut the onion in half, then cut each half into two or a few more pieces so you get large wedges.
Step 4
Slice the garlic into thin pieces.
Step 5
Cut each tomato in half. Remove the stem end, then cut the tomatoes into wedges.
Step 6
Melt the butter in a skillet and sauté the onion in it until softened. Then remove the onion with a tablespoon.
Step 7
Add olive oil (you can use a neutral refined vegetable oil). Add the garlic and tomatoes and sauté for 3-5 minutes.
Step 8
Add the chopped herbs to the tomatoes and salt to taste. At this stage you can add favorite spices and seasonings. You can also add a little tomato paste for a richer, more intense flavor (a scant 1 tablespoon is enough). Gently mix everything and simmer over low heat, covered, for about 5 minutes.
Step 9
Add the previously sautéed onion back to the skillet. Carefully - so you don’t turn the tomatoes into mush - mix everything and keep on low heat for 2-3 minutes more. Remove from the heat and let it rest for a while.
Step 10
Braised tomatoes are very tasty served hot.
Step 11
They make a great side for pasta, mashed potatoes, or boiled buckwheat.
Step 12
They’re just as good chilled. They pair perfectly with crusty fresh bread or a slice of toasted white bread.
