Step 1
How do you bake charlotte without milk or kefir, with baking powder, in a pan on the stovetop without an oven? Prepare all the ingredients. Use large eggs. For the pie, use a pan with a thick bottom and a nonstick coating. In a cast-iron pan or a thin pan, the apples may simply stick. Before making this charlotte, think in advance about which pan you will use so you do not have to scrape the pie off afterward. In a good pan, the pie will not stick.

How do you properly beat eggs with sugar? Combine the eggs and sugar in a deep bowl and beat with a mixer until you get a fluffy, pale mixture. Do not beat the mixture for longer than 4 minutes, otherwise you may overbeat the eggs and the sponge will not rise. Many small bubbles should appear on the surface. You may add a little less sugar if you are afraid the pie will be too sweet.

How do you correctly add flour into the beaten eggs? Sift the flour with the baking powder and add it to the batter. Use all-purpose flour. Mix everything with a mixer at low speed until smooth. You may need a little more flour, so watch the consistency of your batter. It should be pourable, slightly viscous, and fall from the whisk in a wide ribbon.

How do you slice the apples for charlotte? Wash the apples, cut them in half, dry them, and remove the core with the seeds. If the skin is tough, peel it as well. Slice the prepared apples into not too thin slices. So the charlotte does not turn out overly sweet, it is better to use tart-sweet apples with green skin. Granny Smith works perfectly. Tart apples create a nice contrast with the sweet batter.

How do you prepare the pan for making charlotte? Generously grease the bottom and sides of the pan with butter and vegetable oil. If there is too little fat, the charlotte may stick slightly to the pan. So do not skimp on the butter. It should lie on the bottom in small pieces. The batter will absorb all the excess. It is better to use a pan that is not too small in diameter so the batter bakes evenly. My pan is 26 cm, about 10 inches, in diameter.

How do you assemble the charlotte before cooking? Arrange the apple slices in the pan. Evenly pour the sponge batter over them. Place the pan over medium heat and cover it with a lid.

How long do you cook charlotte in a pan? Cook the charlotte for about 10-15 minutes, periodically running a spatula between the batter and the sides of the pan so the batter does not stick. When the batter on top has set well, it should feel springy, flip the charlotte using two spatulas. Cover the pan with the lid again and continue cooking the pie for another 7–10 minutes. Make sure the bottom does not burn. You can reduce the heat to low.

How do you serve simple apple charlotte? Warm skillet apple charlotte is wonderful on its own. But for a special occasion, serve it with a scoop of vanilla ice cream, drizzle it with caramel sauce, or dust it with powdered sugar and cinnamon.
