Simple Semolina Cake in the Oven with Kefir

Preparation
Step 1
Use a measuring cup of 250 ml. Any fat content kefir will do; you may need more than the recipe states. Adjust sugar to taste.

In a deep bowl, combine semolina and flour. Mix well.

Pour kefir into the semolina-flour mixture and stir until uniform. Let it soak for at least 30 minutes. If too thick or dry, add a bit more kefir.

In a separate bowl, beat an egg with sugar using a mixer until light and fluffy.

Add the soaked semolina, baking powder, a pinch of vanilla, and salt to the beaten egg. Don’t be afraid to add salt to sweet cakes - it balances the flavor.

Mix all ingredients on low speed until smooth. The batter should be flowing but medium-thick. At this stage, you can add dried fruits, fresh or frozen fruits, or berries.

Grease a suitable baking pan (I used a 20 cm springform) with a little vegetable oil. Pour the batter into the pan.

Bake in a preheated oven at 356°F (180°C) for 35-60 minutes, depending on pan size and oven specifics. Check doneness with a wooden skewer; it should come out clean. Cool completely before removing from the pan.

Serve semolina cake with tea, coffee, or milk. Enjoy!
