Simple mint sauce
Fresh homemade mint sauce made with chopped mint, sugar, vinegar, and boiling water, perfect for serving with lamb and easy to prepare in minutes.

Preparation
Step 1
Strip the mint leaves from the stems and sprinkle them lightly with salt. Finely chop the leaves to release their flavour.
Step 2
Transfer the chopped mint to a serving bowl or jug. Add the sugar and pour over the boiling water. Stir well until the sugar begins to dissolve, then leave the mixture to cool completely.
Step 3
Once cooled, stir in half of the vinegar and taste. Add the remaining vinegar gradually if needed, adjusting the balance to your preference. If the flavour is too strong, add a little more water; if needed, adjust the seasoning with a small pinch of salt.
Step 4
Cover and store the mint sauce in the refrigerator for up to 3 days. Serve chilled or at room temperature, traditionally alongside lamb.
