Simple Meatless Red Lentil Soup

Lean, light, yet nutritious - even kids will love it! Simple Red Lentil Soup without Meat is an easy and tasty lunch for those on a diet or the whole family. Lentils make the soup more filling and add a creamy touch. It’s delicious even without meat, but if desired, it can be cooked in any broth.

Preparation
Step 1
You will need: water; lentils (I’m using red, but you can also use green); potatoes; carrots; ground black pepper, and salt.
Step 2
Rinse the lentils thoroughly until the water runs completely clear, and soak them in water for 2 hours. After soaking, rinse the lentils several more times until the water is clear.
Step 3
Transfer the lentils to the pot in which you will cook the soup. Pour in water. Place over heat and bring to a boil. Cook for about 20 minutes over medium heat.
Step 4
Peel the potatoes and cut them into small cubes.
Step 5
Peel the carrot and grate it on a coarse grater.
Step 6
Add the potatoes and carrots to the pot. Cook the soup for another approximately 20 minutes until the vegetables are tender.
Step 7
Five minutes before the end of cooking, season the soup with salt and pepper. When the cooking time is up, remove the pot from the heat, cover it with a lid, and let it sit for 10 minutes.
Step 8
Ladle the soup into bowls and serve. Enjoy your meal!
