Preparation
Step 1
Prepare the ingredients. Choose ripe, flavorful mandarins with skins that peel easily. Taste the fruit before cooking so you can adjust the amount of sugar. Use more or fewer mandarins depending on how intense you want the flavor of the compote to be.
Step 2
Peel the mandarins and separate them into segments. Remove as much of the white pith as possible, as it can make the finished drink slightly bitter.
Step 3
Place the peeled mandarin segments in a saucepan. Add the sugar and a pinch of citric acid. Adjust the amount of sugar to taste.
Step 4
Pour in the water and bring to a boil. Reduce the heat and simmer for 15 minutes.
Step 5
During cooking, the mandarin segments should soften and release their juice. If needed, gently crush them with a spoon or potato masher. Remove the compote from the heat, cover and leave to steep for another 15–30 minutes.
Step 6
The compote does not have to be strained. Pour it into glasses together with some of the mandarin segments and serve warm or chilled.
