Simple Healthy Daikon, Carrot & Apple Salad

Step 1
How do you make a simple, healthy salad with daikon, carrot, and apple? First, prepare all the ingredients. You can increase or decrease any component to taste. The flavor depends a lot on what kind of apples you use. If your apples are sweet-tart, use minimal lemon juice.
Step 2
Peel the vegetables. Rinse the daikon, carrot, herbs, and apples under running water, then pat dry with paper towels to remove excess moisture.
Step 3
Grate the daikon on a coarse grater and place it in a deep bowl.

Grate the carrot the same way and add it to the daikon.
Step 5
You can peel the apples, but I prefer leaving the skin on because it contains many vitamins. Grate the apple, add it to the other ingredients, and immediately drizzle with freshly squeezed lemon juice. The lemon prevents the apple from browning and keeps the salad looking appetizing.
Step 6
Drizzle the salad with vegetable oil or olive oil, salt to taste if needed, and add a pinch of allspice or ground black pepper.
Step 7
Mix the salad, then taste it to see if it has enough salt, acidity, and oil. Add what’s missing if needed. Garnish with freshly chopped herbs - dill, parsley, or green onion work well. I also add a few feathers of red salad onion; it decorates the dish and pairs well with daikon, carrot, and apple.
Step 8
You can grate the salad using a Korean-carrot-style grater, and instead of fresh herbs use frozen herbs.
