Simple Blueberry Cake Baked in the Oven

Preparation
Step 1
Use high-grade flour. The eggs should be large. If using small eggs, take 3. The butter must be at room temperature, so take it out of the fridge in advance.

In a bowl, combine softened butter (room temperature) and sugar. Beat with a mixer for 2-3 minutes until fluffy. Optionally, add a pinch of vanilla for aroma.

Add the eggs one at a time, beating after each addition. You should get a fluffy, uniform mixture.

Sift the flour together with baking powder and salt, then add to the batter. Mix on low speed with a mixer. The dough should be smooth, tender, and thick.

Prepare the ingredients for the filling. You can use fresh or frozen blueberries. Frozen ones do not need to be thawed. You can also substitute with any other berries or a berry mix to your liking.

Sort, wash, and dry the blueberries on paper towels. Add sugar and mix gently.

Line a 20 cm (8-inch) round baking pan with buttered parchment paper. If using a silicone mold, you can skip greasing. Spread the batter into the pan and smooth the top.

Spoon the blueberries onto the batter. You can pile them in clusters or spread them evenly across the surface.

Bake in a preheated oven at 350°F (180°C) for 35-40 minutes, or until a toothpick comes out clean. After baking, leave the cake in the pan for 5 minutes.
