Simple Baked Milk Cake

Preparation
Step 1
Take milk of any fat content (do not replace it with kefir or other products). Use high-quality, natural butter without vegetable additives. Use large eggs, taken from the fridge in advance - batter rises better with warm ingredients.
Step 2
In a separate bowl, sift flour and add baking powder and salt. Salt enhances flavor even in sweet baking. Mix the dry ingredients.
Step 3
In a heavy-bottomed saucepan, place butter, pour in milk, add vanilla (or vanilla sugar). Heat gently until bubbles appear, then remove from heat - do not boil.
Step 4
Crack eggs into a bowl. Wash eggs thoroughly to remove bacteria. Beat eggs at low mixer speed, gradually increase speed while adding sugar in small portions. Beat until light, fluffy, and tripled in volume.
Step 5
Add half of the flour to the egg mixture and mix at low speed. Pour in half of the hot milk and mix until smooth.
Step 6
Add remaining flour, then the rest of the milk.
Step 7
Mix everything thoroughly until smooth. The batter should be quite liquid - this is correct.
Step 8
Take a suitable baking pan. I used a 20 cm (8-inch) ring with a foil bottom. Line with parchment or grease lightly if needed. Pour the batter into the pan.
Step 9
Bake in a preheated oven at 350°F (180°C) for 35-45 minutes. Time depends on your oven and pan size. Check doneness with a toothpick - it should come out dry.
Step 10
Remove the cooled cake from the pan and serve. Dust with powdered sugar or slice and layer with any cream. Enjoy!
