Simple Baked Apple Pie (Charlotte)

Fluffy, airy, aromatic, made from simple ingredients! Charlotte is a simple and very tasty apple pie. It’s baked using just five ingredients and the batter takes only 20 minutes to prepare – perfect for a cozy tea time.

Preparation
Step 1
Use large eggs. Tart-sweet apple varieties work best. If apples are small, take 3 fruits.
Step 2
Mix flour with baking powder and sift. This aerates the flour and helps the pie rise fluffy and airy.

Wash, dry, and core the apples. Peel if the skin is thick or tough. Cut apples into medium cubes.
Step 4
Combine eggs with sugar and vanilla sugar. Vanilla sugar can be replaced with vanillin added to the flour.
Step 5
Beat eggs and sugar on high speed until light and fluffy. Stop when the mixer leaves clear trails.
Step 6
Gradually add sifted flour in small portions, folding gently with a spatula to preserve airiness.
Step 7
The batter should be uniform, airy, and light.

Line a 22 cm baking pan with parchment. Grease lightly if needed. Pour in one-third of the batter and smooth.

Spread half of the chopped apples on top.
Step 10
Pour another third of the batter, then add remaining apple cubes.

Pour the rest of the batter and smooth. Alternatively, mix all apples into the batter at once.

Bake immediately in a preheated oven at 180°C (356°F) for 35-40 minutes. Do not open the oven for the first 25 minutes. Test doneness with a skewer; it should come out dry. Cool on a wire rack.
