Silky Smooth Hummus with Spiced Garlic Butter Topping

Preparation
Step 1
Start by simmering chickpeas with garlic and a touch of bicarbonate of soda until they’re exceptionally soft.

Once drained - saving some of the cooking liquid - blend the chickpeas and garlic with fresh lemon juice.
Step 3
While blending, slowly incorporate tahini until the mixture becomes ultra-smooth and creamy. If needed, add a bit of the reserved cooking liquid to adjust the texture. Season to taste with salt and let cool.
Step 4
For the topping, gently fry garlic in melted butter until golden, then add spices, smoked paprika is perfect here, it adds a warm, aromatic finish. Spoon the hummus into a serving bowl and finish with a generous drizzle of the spiced garlic butter.
