Siberian Dumplings with Spinach and Mixed Meat Filling

Preparation
Step 1
First, prepare all the necessary ingredients and spices for this hearty homemade dish made from perfect dough with spinach and meat filling.
Step 2
To make the dough, place 50 grams of fresh spinach leaves into a blender cup, pour in 200 ml of boiled water, and blend for 2 minutes until smooth.
Step 3
Pour the blended spinach mixture into a large bowl, then add 1 tsp of salt and 1 tbsp of vegetable oil.
Step 4
Crack 1 egg into the bowl and add 500 grams (approx. 4 cups) of sifted all-purpose flour.
Step 5
Mix everything thoroughly and knead the dough. Once smooth and elastic, place the dough into a plastic bag and let it rest for 30 minutes.
Step 6
Using a meat grinder with a coarse plate, grind 500 grams (about 1.1 lbs) of chopped pork and beef alternately with 2 onions and 3 garlic cloves into a large bowl.
Step 7
Season the meat mixture with salt, ground black pepper, coriander, and add 3 tbsp of vegetable oil. Mix thoroughly by hand and let rest for 15 minutes.
Step 8
Lightly flour the surface and divide the dough into 4 portions. Roll each into a thin sheet about 1 mm thick.
Step 9
Use a round cutter to make dough circles. Mix the rested meat filling again and place 1 teaspoon of filling onto each circle.
Step 10
Seal the edges well to form dumplings. You should get about 250 dumplings. Place them on a lightly floured tray.
Step 11
Bring a large pot of water to a boil. Add salt, bay leaves, and vegetable oil. Drop in the desired amount of dumplings and bring back to a boil on high heat.

Once the dumplings float to the surface, cook for another 2-3 minutes on medium heat until fully cooked.

Serve the cooked Siberian dumplings with spinach and meat on plates and bring to the table.
