Shrimp Ramen Soup
Very thick, bright, and filling - perfect for fans of Asian cuisine! Shrimp ramen is made with soy sauce and ginger and will nicely diversify your menu. For extra color, use bell peppers of different colors. Scallions and sesame seeds add a special finishing touch.

Step 1
How to make shrimp ramen soup? First, prepare all the ingredients listed. Use king prawns or tiger prawns, though regular shrimp also work. Remove the shrimp from the freezer and let them fully thaw at room temperature. To speed up thawing, cover the shrimp with cold water and leave for a while. Hard-boil the eggs.
Step 2
Peel the carrots. To make the finished soup look more colorful, I used half a yellow and half an orange bell pepper. You can use, for example, red and green. Remove the seeds and core from the peppers. Rinse and pat the vegetables dry.
Step 3
Grate the carrot on a Korean-style grater or cut it into thin matchsticks by hand. Slice the peppers into thin strips. Peel the garlic.
Step 4
Remove the heads and shells from the shrimp. Remove the dark vein along the back.
Step 5
In a high-sided skillet or saucepan, heat vegetable oil. Add finely chopped garlic and sauté over high heat, stirring, for a few seconds. If using fresh ginger, add it at this stage too, chopped into small pieces.
Step 6
Add ground ginger and hot pepper. Adjust the amount of hot pepper to your taste.
Step 7
After 5-10 seconds, add the carrot. Cook over high heat for a couple of minutes, stirring constantly.
Step 8
Next, add the bell pepper and continue cooking for 1-2 more minutes.
Step 9
Add a little sugar and pour in soy sauce. Stir again and keep cooking just until the vegetables become soft - this will take very little time, from a few seconds up to a minute.
Step 10
Push the vegetables to the sides of the pan with a spatula or spoon. Lower the heat slightly. Place the shrimp in the center as shown. Sear on one side for 30-40 seconds.
Step 11
Turn each shrimp over and cook for another 30 seconds.
Step 12
Add ramen noodles to the pan. Pour over boiling water, cover with a lid, and remove from the heat. While the soup steeps, peel the eggs and cut the nori sheets into small pieces with scissors.
Step 13
Pour the soup into a deep individual bowl.
Step 14
Add one or two egg halves and the nori pieces. Sprinkle with sesame seeds and finely chopped scallions. Done. - serve!
