Preparation
Step 1
First, prepare the necessary ingredients. Use large eggs; if the eggs are small, use 4.
Step 2
Boil the shrimp in salted water, cool, and peel. You can use any shrimp - large or small. The net weight of peeled shrimp should be at least 200 g (7 oz), so if your shrimp have heads and shells, buy extra. Set aside a few whole shrimp to decorate the salad. Cut the remaining shrimp into small pieces.
Step 3
Cut the imitation crab sticks into small cubes or grate them on a coarse grater.
Step 4
Hard-boil the eggs, cool, and peel. Separate the whites from the yolks and grate them into separate bowls: whites on a medium grater, yolks on a fine grater. Set aside a little grated yolk to decorate the top.
Step 5
Grate the cheese on a coarse or medium grater. Use any cheese you like - just make sure it’s good quality, with no dairy-fat substitutes.
Step 6
Place a ring mold on a plate (16-18 cm / 6-7 in). Make the first layer with most of the imitation crab sticks. Drizzle with mayonnaise. (For convenience, I put the mayonnaise into a piping bag and snipped off the tip.) Next, spread the shrimp evenly and drizzle with mayonnaise. Spread the grated cheese over the shrimp and drizzle with mayonnaise. Next layer: grated egg whites and mayonnaise. The second-to-last layer: grated yolks with mayonnaise.
Step 7
Sprinkle the top with the remaining imitation crab sticks. The layer shouldn’t be too thick - it’s more for looks than flavor. The red-and-white top looks very festive on the table. Refrigerate the salad for 1 hour to let it soak.
Step 8
Before serving, remove the ring mold. Decorate the salad with the reserved whole shrimp, grated yolk, and, if desired, black caviar or an imitation. Or decorate however you like. Enjoy!
