Shrimp and Cheese Salad

Preparation
Step 1
Use either frozen or pre-marinated shrimp. I had shrimp in spicy oil with seasonings. If using frozen shrimp, thaw, rinse, and boil in salted water for 2-3 minutes. Then cool and peel. You may drizzle with lemon juice and sprinkle with spices, or leave as is.
Step 2
Rinse salad leaves and pat dry with paper towels to remove excess water. You can use a mix of leaves or just one type. Ideal options include iceberg, romaine, spinach, butterhead, corn, frisée, or lollo rosso. Place the leaves in a large bowl.
Step 3
Rinse and dry cherry tomatoes and cucumber. Regular tomatoes can substitute cherry tomatoes. Peel the cucumber if the skin is thick. Chop vegetables into medium-sized pieces.
Step 4
Wash and cut bell peppers into thin strips. For visual appeal, use peppers of different colors. Add to the salad bowl with other ingredients.
Step 5
Peel and cut the onion into thin sticks. Layer shrimp and onion on top of the salad.
Step 6
Add soft brined cheese to the salad. Drizzle with vegetable or olive oil, and season with salt and pepper to taste.
Step 7
Garnish with a few sprigs of parsley or dill. Salad is ready!
Step 8
Before serving, thoroughly toss all ingredients in the salad bowl.
