Shortcrust Apple Pie

Step 1
The butter must be cold.
Step 2
Mix the flour with baking powder and sift. You may need more or less flour, depending on the dough’s consistency.

Add the cold butter, cut into cubes, to the flour.
Step 4
Rub everything together with your hands until you get a crumbly texture.
Step 5
Using a fork or whisk, beat the egg and egg yolk with the sugar until smooth. Always wash eggs before use, as harmful bacteria can be present even on seemingly clean shells. The dough is moderately sweet. If you prefer it sweeter, increase the sugar amount.
Step 6
Pour the egg mixture into the crumbly dough mixture. Mix quickly. There’s no need to knead the dough for a long time.
Step 7
The dough should be smooth and soft. Divide the dough into two equal parts, wrap in plastic wrap, and refrigerate for half an hour.
Step 8
Prepare the pie filling. Both sweet and sweet-tart apples will work.
Step 9
Wash, dry, peel, and core the apples. Slice them into medium-thick wedges.
Step 10
Sprinkle the prepared apples with lemon juice to prevent browning and mix.

Roll out one portion of dough on parchment paper into a round layer about 0.2-0.3 inches (0.5-0.7 cm) thick. My circle was around 8.5-9 inches (22-23 cm) in diameter.

Roll out the second portion of dough similarly. Cut the circle into 12 sectors, without cutting all the way to the center.
Step 13
Place the apple slices on the rolled-out base, leaving the edges free. Sprinkle each layer of apples with sugar and cinnamon. Adjust the sugar to taste depending on how sweet your fruit is. Skip cinnamon if you don’t like it.
Step 14
Carefully place the twisted dough strips over the filling. Press the ends of the spirals to the base of the pie.
Step 15
You can sprinkle the center with cinnamon mixed with sugar.
Step 16
Bake the pie in a preheated oven at 350°F (180°C) for 25–30 minutes. Adjust baking time and mode according to your oven. Don’t overbake, or the pie will dry out. It should be lightly golden.

Let the finished pie cool, cut into pieces, and serve. Enjoy your meal!
